Warm & comforting celeriac soup recipe for winter
What’s your go-to classic winter food? Soup?
Soup is probably up there with some of the most popular winter foods, but what those soups include can vary widely.
This celeriac soup recipe is a fun one to try because it uses a vegetable that most of us aren’t that familiar with – celery root.
Celeriac, or celery root is a variety of celery grown for its root instead of for its stalks. It’s a big knobby looking ball that doesn’t look all that appetizing. It’s often covered with dirt and roots, and from the outside, doesn’t look like something you’d be eager to use in an elegant soup.
But when you cut open a celeriac root, you’ll see it’s pure white interior that makes a perfect creamy soup, without the cream. Pair this with potatoes and you’ve got a new winter comfort food in the making.

Ingredients:
- 1 celeriac root (or celery root)
- 2 small potatoes (or equal amount cauliflower)
- 1/2 green apple
- 2 cups vegetable broth
- 1/2 cup coconut milk
- 1 tsp apple cider vinegar
- 1/2-1 tsp salt
- Olive oil for drizzling
