Cranberry Orange Zucchini Bread ~ A Festive Vegan Dessert
Tis the season… to eat a bunch of desserts I’m going to regret.
Every year I try to get a bit healthier. I take my favorite foods and find ways to bring their nutrition up, and their sugar down.
One way I love to do this is by adding fruits and vegetables to desserts. You can easily amplify the health factor of a baked good by sneaking in some fruits & veggies.
Christmas is around the corner and we’ll have tons of dessert recipes thrown our way. But you can feel good about this one because it’s vegan, includes zucchini, cranberries, and goji berries that are packed with antioxidants.
Not only that, but it’s colored with real foods. None of these nuclear greens and red #40s. None of that nonsense. You’re getting green from the zucchini, and red from the cranberries and goji berries for a truly festive dessert you can feel good about eating.
But wait, isn’t zucchini a summer food? Don’t you promote using seasonal ingredients?
I’m glad you asked – yes, zucchini is a summer food, but this recipe uses frozen zucchini so you can save zucchini when it’s in its prime in summer and have it ready to go for recipes like this! Don’t have frozen? No problem, fresh will work too.

Ingredients:
- 1.5 cups (215g) flour
- 1/2 cup (118g) sugar
- 1/2 tsp each baking soda & baking powder
- 1/4 tsp enerG egg replacer + 1 tbsp water (or a flax egg)
- 2/3 cup frozen zucchini (thawed)
- 1 orange, juice and zest
- 3 tbsp olive oil
- 1/2 cup dried cranberries, divided
- 2 tbsp dried goji berries
- 1/3 cup (64g) vegan butter
- 1/4 cup (44g) coconut butter
- 2/3 cup (88g) icing sugar
