Eating fresh mache lettuce greens in winter
It can be such a struggle to think of what to eat in Winter. Especially when you’re trying to eat more local and seasonal ingredients.
On cold blistery days I crave warming comfort foods. Other times I crave the freshness of raw vegetables.
The problem is, how do you incorporate fresh winter vegetables into dishes while still getting that warm cozy feeling from comfort foods?
Enter the winter harvest bowl.
It combines the warm comfort of a bowl of rice, combined with fresh ingredients you can find locally in winter. I even used the mache lettuce that I showed you how to grow in my last video.
Even if you live in the north, you can still be eating local & fresh ingredients through January and February.

Ingredients:
- 2 carrots, shredded or peeled into ribbons
- 1 beet, shredded or sliced into matchsticks
- 4-8 mache florettes, stems removed
- 4 cups cooked rice
- 1 can chickpeas
- 2-3 sprigs parsley
- 1-2 green onions
- 1-2 cloves garlic
- ¼ cup olive oil
- ¼ cup soy sauce/braggs
- 2 tbsp apple cider vinegar
- 4 tsp black sesame seeds
- Pepper to taste
