Eating farm-to-table when you live in a cold climate can be tough. What are you supposed to eat in winter? Are you destined to 6 months of soups?
Not at all!
To make the process of seasonal eating easier, I’ve created a list of 15 winter vegetables that you can eat fresh in winter, even if you live in a climate, along with a week’s worth of dinner ideas featuring these cold-hardy vegetables.
At first glance, this list might not knock your socks off, but trust me, when you actually consider the amazing array of dishes that can be prepared with this simple collection of vegetables, I bet you’ll actually start to love the idea of eating seasonally in winter.
Farm-to-table eating is attainable no matter where you live. There’s a fine line between using some preserved summer food (freezing and drying are my favorite methods) and using fresh ingredients. If you only resort to preserved summer foods, you’re truly missing out.
I hope you give some of these cold-weather veggies a try, even if they’re new to you. Who knows, they might become a winter favorite!
