An easy to make purple cabbage salad recipe for warm winter days
When you only have winter vegetables but you’re craving a lighter, fresher meal, you’ll want to try a salad like the one I’m sharing with you today. It uses red cabbage and carrots, both great winter veggies that can be eaten raw.
If you aren’t already eating red cabbage, you’ll definitely want to try this recipe! It is a great way to take advantage of all the antioxidants, and anti-inflammatory benefits you get from eating this yummy veggie.

Ingredient List
- 1/2 red cabbage, chopped (150g)
- 2 large carrots, shredded (140g)
- 1/4 small onion, finely chopped
- 1/2 lemon, juiced
- 1/3 cup veganaise (80g)
- 1 tbsp honey or coconut aminos
- 1/2 tsp dried dill, if you have fresh or frozen, use 1 tbsp
- 1/4 tsp salt
- fresh pepper
