Tangy and Delicious Rhubarb Drink
I can’t wait for the first berries in spring. Around here usually that’s haskaps, or gooseberries or June strawberries.
But do you eagerly await rhubarb?
I do.
I never used to like rhubarb. What was all the fuss was about?
It’s not like you can take a bite out of it and think… umm… tangy and delicious!
But when I learned how to cook with it, everything changed.
You might have tried rhubarb pie, perhaps mixed it with strawberries, but have you ever tried it in a drink?
You should!!
This rhubarb drink I’m sharing today is amazing.
I eagerly await rhubarb season every Spring just so I can make it.
The recipe I’m sharing makes a lot, so you can be sipping this tasty drink for weeks or months to come.
It makes a syrupy concentrate, so you can dilute it with water, or kombucha, or vodka. Whatever you like.

- 8-10 stalks rhubarb (300g)
- 2.5 cups water
- 250g sugar
- ½ lemon
- 3 cloves
- 1 tsp vanilla
